Although I have made the Honolulu to Maui flight many times, previously it was always a late afternoon or evening return flight back to Maui. This was my first early morning departure from Oahu so I was able to get some new perspectives over Lanai and along the West Maui Mountains.

IMG_0763  Our early morning travel began with a quick run to chinatown (64 N. Pauahi Street) to buy manapua (Chinese "bau") from Char Hung Sut.
IMG_0759  Despite the deceptive "hole in the wall" appearence from street side, there always seems to be a bee-hive of activity inside. The "chaos" is suprisingly well ordered and everyone has a place in the tight workflow.
IMG_0760  A difference for me from the old days (circa late 1960's) is the lady is using a press where the old man before her time used a long tube of dough and a meat clever cutting and then flattening and flipping the slices out to the various people placing the filling.
IMG_0762  Most of the prep is completed by 8 or 9 am and the stacks and stacks of manapua is steamed through the course of the day as demand dictates.
